Padraic Keane sat in his Edgewood office talking enthusiastically about his wood-fired catering service that continues to grow since he learned how to be a “Pitman” and started his own company three years ago.
Padraic (the Irish version of Patrick) worked in his parents’ pub and restaurant in Galway, Ireland before moving to America and settling within walking distance of his work, with his wife Kaylan, who assists with food preparation, along with a small staff.
The space is deceiving, with a door leading to a large food preparation room, and behind that another huge storage area, and behind that an outside area where he has his two large smokers. He built the second one at the Steel Yard in Providence.
Keane’s Classic Barbeque Package is an all natural barbecue option offering a sampling of red oak smoked meats (Duroc Smoked Pulled Pork Shoulder, 18-hour All Natural Smoked Beef Brisket, and Smoked Buffoni Farms Chicken Thighs), and a choice of two scratch-made sides served with potato rolls, house pickles and barbecue sauces at $24.99 (plus tax) per person. The sides include traditional coleslaw, buttermilk potato salad, roasted sweet potato salad, honey cornbread, salad and Texas black pepper greens…all vegetarian. For a small additional cost you can add smoked barbecue chili, chive and cheddar mac and cheese, and a wedge salad with bacon.
All hot items are served in disposable pans with sternos, biodegradable plates, cutlery and paper napkins.
The Smoked Cold Sandwich Platter ($19.99 plus tax) includes The Bird (house smoked turkey); Happy Swine (house smoked pork loin); Roast Round (smoked top round); and Shroom Lovers (charred mushroom). They include fabulous accoutrements and two sides.
New England Patriots fans will love this one. Keane’s is offering a special Sunday Patriot Game Special through February 2.
All menu items serve 4-6 people and include meat, side and pickles and sauce of your choice. Meats run from $28 (kielbasa) to $54 (dry rubbed smoked pork ribs). Sides run from $13 for cole slaw to $22 for the chive and cheddar mac and cheese. Pickles and sauces are $10.
You may order and pay online (www.keaneswoodfired.com/game-day). Pickups will be held at 1850 Broad St. in Cranston from one hour prior to kickoff (check the website for weekly updates). Guaranteed pre-order cutoff is midnight Friday each week. Limited walk-in orders will also be available.
Padraic is now planning to offer special Thanksgiving and Christmas catering, so stay tuned for that. Melt in your mouth barbeque
If you like your meats tender and juicy, you have to try Keane’s Duroc Smoked Pulled Pork Shoulder and his 18-Hour All Natural Smoked Beef Brisket. We tried both, and ate them without using a knife, as our forks pulled the succulent meats apart. We enjoyed the two meats both unadorned and with their special barbecued sauce and ate the leftovers cold the next day on rolls.
The cole slaw came as a surprise, as it had a nice bite to it, complementing the meats perfectly. We chose the sweet honey corn bread for our other side and loved it. The accompanying house pickles were more on the sour side than dill, which is the way Joyce likes them. She got my share.
Keane’s Classic Barbeque was by far the tastiest, most tender barbecue I can ever remember having.
